I picked 2 cupcakes (banana and chocolate) for a post-mortem at home, and to compare them against my chocolate cupcake.
While understanding that mass cupcakes at bakerias are simpler-designed, as opposed to our made-to-order cupcakes, my biggest feat that day was to understand the flavour, texture and presentation from Bake With Yen.
For their banana cupcake - the muffin is heavier, but still light, and the flavour of the banana is rich (like a banana butter cake) but not oily (which is good). It has some hints of blueberries inside (yumm), and the butter frosting was a good compliment - not too much (they do not cut level the top of muffins like we always do - we need to level for many deco works).
For their chocolate cupcake - the muffin is nothing chocolatey at all, but it's very light and fluffy, and the butter cream is sugary, thick and sweet. The fondant blue flower is another sweet flavour, albeit tasteless.
Our chocolate muffins apparently are very rich in chocolate (have to check production costs again?), and still much preferred for me (biased opinion?), but hey, hopefully our customers loved them too (called chocolate moist muffins).
